Munich Mustard

Senf


I have to tell you this story about Munich mustard. Senf is mustard in German and the very best senf comes from Bavaria. I prefer the brand Develey which produces a beautiful sweet Munich mustard. It goes well with just about everything from sausages to pretzels. I really like to marinate chicken and pork with it before I put them on skewers. It's so delicious.

Every time I go to Munich, my friends and I go on the hunt for senf. We usually go to the Viktualienmarkt and go from shop to shop buying all the senf they have. When it's all said and done we have about 30 tubes a piece to take home. Unfortunately we're often in Munich at Easter and most of the stores are closed. That's when the train station comes in handy, it never closes and we end up stripping the stores of all there senf. I should have told you that senf comes in toothpaste like tubes which are great when you garnish a sausage.

The best part comes when we get home and go through customs with all this mustard. They look at us like we're crazy. Some of them actually ask us for some recipes. So here's my mustard marinade recipe:

Munich Mustard Marinade Recipe

Marinate chicken or pork

  • a generous portion of Munich Mustard - sweet senf
  • juice from 1/2 a lemon
  • 3 cloves of crushed garlic
  • pepper
  • salt
  • basil
  • Cover your chicken or pork with mustard marinade and put it in the fridge for at least 4 hours. It's best if your pieces are cut small and they're really good on skewers.
